Granola is one of my life essentials 🙂 I use it to top smoothie bowls/yoghurt and carry it around all day in little bags as snacks. My favourite is when it’s toasted and super crunchy and clumpy. The great thing about granola is you can throw it together with absolutely any nuts/oats/seeds you have lying around so you never need to go out and buy specific ingredients. Here is one of my go-to recipes: (note any nuts, seeds, dried fruit can be substituted)
Ingredients:
- 1c gluten free oats
- 1c shredded/desiccated coconut
- 1c buckinis (I use raw buckwhat groats)
- 1/2c roughly chopped almonds
- 1/4c roughly chopped walnuts
- 1/4c pumpkin seeds
- 1/4 sunflower seeds
- 1 tbslp chia seeds
- 5 dates (medjool are best)
- 1/2c melted coconut oil
- 1 tsp vanilla extract
- 1 tsp cinnamon
Method
- Blend the oats, coconut and dates together until the mixture starts to clump
- Add all the other ingredients into a large mixing bowl and mix well
Cooking instructions: (Stove or Oven)
- Stove
- Put half the mixture into a large pan greased with coconut oil and place on medium high heat
- keep stirring/mixing so the granola gets evenly toasted
- Toast until your desired crunch level is reached
- Oven
- Lay the mixture out onto a raised and baking paper lined baking tray at 180C
- Bake for 10 minutes, then mix and bake for another 10 minutes
- If the granola is bronzed enough and smells heavenly it is ready- however for extra crunch leave in longer
