This is one of my go to snacks when I’m needing something savoury, filling or satisfying. It is super simple and full of protein! These are perfect for a substitute to potato chips or crackers and dip. <3

Pesto Chickpeas

Pesto Chickpeas

Ingredients

  • 1 Can of chickpeas or 1c of soaked and cooked chickpeas
  • 2 heaped tblsp basil pesto
  • sprinkle of mixed herbs
  • pinch salt and pepper

Method

  • mix all the ingredients together in a bowl until the chickpeas are coated in pesto and herbs
  • (to cook in pan) –> put the pan onto medium/high heat stove and grill until chickpeas start to go brown (keep rotating chickpeas to avoid burning them)
  • (to cook in oven) –> lay chickpeas on a baking paper lined tray and into a preheated oven at 180C. Bake for 7 minutes then switch to grill/fan grill until chickpeas start to go brown

Take off the heat and enjoy!
