This recipe is my new favourite treat and will satisfy any chocolate craving. I used to think going refined sugar-free meant that I couldn’t have my favourite things like cookies, Nutella and chocolate. Now I realise I can just make my own versions that genuinely taste just as good or better than the originals. This new little recipe tastes crazy decadent and is gluten free (if you use gluten free oats), refined sugar free, vegan and paleo.
Base Ingredients:
- 1c gluten free oats
- 1/2c hazelnuts
- 1/2c cacao powder
- 2 tblsp maple syrup
- 1 tblsp melted coconut oil
- 2 tblsp almond (or other nut) butter
- tsp vanilla extract
- pinch salt
- (optional – dark chocolate chips)
Filling
- 1c plain unsweetened yogurt (coconut if vegan)
Method
- Blend up the hazelnuts into a fine powder then add the cacao powder, and mix well
- Blend the cacao hazelnut mixture with the oats, maple syrup, almond butter, coconut oil, vanilla extract and salt until the mixture is sticky and starts to clump
- Roll the mixture onto baking paper with a rolling pin and use a small round cookie cutter to make circles
- Place the circles on baking paper in the freezer for 1 hour
- Spoon out about 1 tblsp of yogurt and place on one cookie, then place another cookie on top
- Enjoy and eat immediately as cookies get soft and melty when warmed!
