avocado, chickpea, broccoli salad

This salad is not only delicious and satisfying but it’s also ideal if you’re on a budget! The secret to saving money on vegetables is to buy them frozen. Frozen vegetables are actually ‘fresher’ than the ‘fresh’ vegetables as they are picked at their peak ripeness. They are also super cheap and you can use as much as you like of them at a time (avoiding the struggles of buying veges only to have them go-off in the fridge after a few days). I make this salad in bulk and keep it ready to go in the fridge for the week 🙂

Ingredients

  • 1 500g packet of frozen chopped broccoli florets
  • 1 can of organic additive free corn
  • 1 can of organic additive free chickpeas
  • 1 avocado
  • 3 tablespoons pesto
  • 3 tablespoons feta cheese
  • (optional to sprinkle over roasted pine-nuts)

Method

  1. Preheat the oven to 180C
  2. Take out the frozen broccoli florets, season lightly and roast in the oven for 30 minutes
  3. Mix the corn and chickpeas together with the pesto in a bowl
  4. Take out the broccoli and mix with the corn, avo and chickpeas
  5. Sprinkle over the feta cheese (and optional roasted pinenuts)
