Persimmons are such an underrated fruit. They make an amazing addition to salads, breakfasts or to eat just as they are. They are naturally sweet so they taste amazing fresh, dried, raw or cooked. Below is an easy recipe for a quick and nutritious breakfast using First Fresh persimmons.

● 1x large persimmon
● 1/2 cup granola
● 1/2 cup natural yogurt
● 1/4 cup berries (I used fresh raspberries)

● Chop or peel the skin off the persimmon
● Slice the persimmon into 1/2 cm slices
● In a glass or jar, add half of the persimmon slices into the jar
● Spoon 2 tablespoons of granola on top of the persimmon
● Add 2 tablespoons of yogurt on top of the granola layer
● Add most of the berries on top of the yogurt (leave a couple to sprinkle on top)
● For the remaining persimmon slices, cut them into stars and place them on top of the berry layer
● Spoon the remaining yogurt and granola on top
● Sprinkle the remaining berries to top the parfait
● Enjoy fresh or leave in the fridge overnight
