This recipe takes hardly any time and is melt-in-your-mouth delicious!! It is paleo, gluten free, refined sugar-free, vegan and super easy to use when you want to make delicious baking to impress 🙂
Recipe is:
Preheat oven to 180C
Crust:
- 2c of almonds
- 3/4c coconut oil
- 1 tsp vanilla extract
- pinch salt
- 1 tblsp honey or natural sweetener
– Grind up almonds into a flour, add melted coconut oil, vanilla extract, salt and honey. Mix and press into greased muffin tin moulds. Bake in oven for 15 minutes at 180C until crusts are golden on top
Topping
- 3 green apples
- 4 sliced strawberries
- 1/4c blueberries
- 1 tsp vanilla essence
- 1 tblsp water
– Stew apples in pot with water until softened. Add berries and vanilla essence and stew for a furthur 10 minutes. Place berry/apple mixture on top of cooled crusts and serve with greek yogurt
